Cooling Conundrums
Skipping the Cooling Rack
Not using a cooling rack can make the bottoms of your cookies soggy as they retain heat and moisture on the baking sheet. Transfer them to a rack to cool completely. Proper cooling helps maintain the ideal texture of your cookies, keeping them crisp on the outside and soft inside.
Overcooling on the Pan
Leaving cookies on the hot baking sheet can cause overbaking, resulting in dry, hard cookies. Move them to a cooling rack once they are set to ensure they cool properly. This step prevents residual heat from continuing to cook the cookies, preserving their perfect texture and flavor.
