Barbecue sauce needs different storage conditions, depending on the container
If you decant your barbecue sauce into a pot and keep it in your fridge, you’re probably just following the instructions on the bottle. That’s because most companies tell you to refrigerate their barbecue sauce. Of course, you should totally do that if you keep it in the bottle, but not if you pour it into another container.
That’s because the moisture in your refrigerator allows odors and food bits to move around the air, and this can ultimately make its way into your sauce. Not only is this pretty gross in terms of when you eat the sauce, but it can also increase the chance of mold growing within the condiment while it’s stored.
