Salami is unlike other meats and prefers room temperature conditions
Salami is meat, and meat is kept in the fridge, right? Well, not in this case. Although there’s no doubt that salami is a form of meat, it’s slightly different from other types of edible on the market. That’s because it’s a preserved meat, and thrives off the oxygen that it receives out in the open.
By depriving salami of oxygen, you might find that it goes extremely dry and loses some of its signature taste and texture. So, you should instead allow it to do its own thing in a room temperature environment, such as in a pantry or a cupboard in the kitchen, where it will normally keep for around six weeks.
