As matured cheeses are normally cured, they don’t need to be kept in a cold and damp environment. Refrigerators will dry out these cheeses and make them much harder than they already are, and that could ruin the fact they’ve taken years to mature. Store these cheeses in a cool and dark place for the perfect amount of cheesiness.
