Potatoes will rot if you store them somewhere moist
If you have potatoes in your refrigerator, you should probably remove them right away. Trust us. As a rule, potatoes need to be stored in a place that’s dry, dark, and cool. So, pretty similar to a refrigerator, right? Not quite. A refrigerator may be dark when the door is closed, but it’s definitely not cool or dry.
Instead, it’s cold and moist. Although it’s not the end of the world if you do place a single potato in your refrigerator for ten seconds, storing them in the refrigerator for long periods of time will ultimately convert the starch content in the potato into sugar. The best place to store them is in a well-ventilated area.
